Ingredients:

  • 2 cans black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • Salt and pepper to taste
  • Fresh cilantro and avocado for garnish

Directions:

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, and bell pepper, sautéing until softened.
  2. Stir in cumin and chili powder, cooking for 1 minute.
