Ingredients:

  • 12 large portobello mushrooms, stems removed
  • 1 pound ground turkey
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups fresh spinach, chopped
  • 1/4 cup Parmesan cheese, grated
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, cooking until softened.
  3. Add ground turkey and cook until browned. Stir in chopped spinach and cook until wilted.
