Spinach and Ricotta Stuffed Shells

Ingredients:

  • 1 package (12 ounces) jumbo pasta shells
  • 2 cups ricotta cheese
  • 1 cup fresh spinach, chopped
  • 1/4 cup Parmesan cheese, grated
  • 1 egg, lightly beaten
  • 2 cups marinara sauce
  • Salt and pepper to taste
  • Fresh basil for garnish

Directions:

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Cook pasta shells according to package instructions. Drain and set aside.
  3. In a large bowl, combine ricotta cheese, spinach, Parmesan cheese, egg, salt, and pepper.
  4. Stuff each pasta shell with the ricotta mixture and arrange in the baking dish.
  5. Pour marinara sauce over the stuffed shells.
  6. Bake for 25-30 minutes, or until heated through.
  7. Serve garnished with fresh basil.
