Ingredients:

  • 1 cup lentils, rinsed
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 8 small corn tortillas
  • Fresh cilantro, chopped
  • Lime wedges for garnish

Directions:

  1. In a medium saucepan, bring lentils and vegetable broth to a boil. Reduce heat and simmer until lentils are tender, about 20 minutes. Drain any excess liquid.
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, cooking until softened.
  3. Stir in cooked lentils, chili powder, cumin, salt, and pepper. Cook for an additional 5 minutes.
  4. Serve lentil mixture in warm corn tortillas, topped with fresh cilantro and a squeeze of lime juice.
