Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (15 ounces) diced tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 large eggs
  • Fresh parsley for garnish

Directions:

  1. In a large skillet, heat olive oil over medium heat. Add onion, garlic, and bell pepper, cooking until softened.
  2. Stir in diced tomatoes, cumin, paprika, salt, and pepper. Bring to a simmer and cook for 10 minutes.
  3. Make small wells in the tomato mixture and crack an egg into each well.
  4. Cover and cook until eggs are set to your liking, about 5-8 minutes.
  5. Serve shakshuka garnished with fresh parsley and a side of crusty bread.
