Mushroom and Spinach Stuffed Chicken Breast

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cups mushrooms, sliced
  • 2 cups fresh spinach, chopped
  • 2 cloves garlic, minced
  • 1/4 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Toothpicks

Directions:

  1. Preheat oven to 375°F (190°C). Line a baking dish with parchment paper.
  2. In a large skillet, heat olive oil over medium heat. Add mushrooms, spinach, and garlic, cooking until mushrooms are browned and spinach is wilted.
  3. Stir in Parmesan cheese, salt, and pepper. Remove from heat.
  4. Cut a pocket into each chicken breast and stuff with the mushroom and spinach mixture. Secure with toothpicks.
  5. Heat a large skillet over medium-high heat. Sear chicken breasts until golden brown on both sides.
  6. Transfer chicken to the baking dish and bake for 20-25 minutes, or until cooked through.
