Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Directions:

  1. In a medium saucepan, bring quinoa and water to a boil. Reduce heat, cover, and simmer until water is absorbed, about 15 minutes. Fluff with a fork and let cool.
  2. In a large bowl, combine cooled quinoa, cucumber, cherry tomatoes, olives, red onion, and feta cheese.
  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper. Pour dressing over salad and toss to combine.
