Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 lemons, zested and juiced
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 4 cups mixed vegetables (such as bell peppers, zucchini, and cherry tomatoes)
  • 2 cups cooked quinoa

Directions:

  1. In a large bowl, whisk together olive oil, lemon zest, lemon juice, garlic, and oregano. Add chicken breasts and marinate for at least 30 minutes.
