Ingredients:

  • 4 tilapia fillets
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 4 cups fresh spinach
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 375°F (190°C). Line a baking dish with parchment paper.
  2. In a small bowl, combine olive oil, garlic, lemon zest, and lemon juice. Brush tilapia fillets with the mixture and season with salt and pepper.
  3. Bake for 15-20 minutes, or until fish is cooked through and flakes easily with a fork.
