Ingredients:

  • 1 head cauliflower, grated or processed into rice-sized pieces
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Directions:

  1. In a large bowl, combine grated cauliflower, cherry tomatoes, cucumber, parsley, mint, and red onion.
