Ingredients:
- 1 head cauliflower, grated or processed into rice-sized pieces
- 2 tablespoons sesame oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup peas
- 2 tablespoons soy sauce
- 2 eggs, lightly beaten
- Green onions for garnish
Directions:
- In a large skillet or wok, heat sesame oil over medium-high heat. Add onion and garlic, cooking until softened.
- Stir in bell pepper, peas, and cauliflower rice. Cook until vegetables are tender.
