Ingredients:

  • 1 head cauliflower, grated or processed into rice-sized pieces
  • 2 tablespoons sesame oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup peas
  • 2 tablespoons soy sauce
  • 2 eggs, lightly beaten
  • Green onions for garnish

Directions:

  1. In a large skillet or wok, heat sesame oil over medium-high heat. Add onion and garlic, cooking until softened.
  2. Stir in bell pepper, peas, and cauliflower rice. Cook until vegetables are tender.
  3. Push vegetables to one side of the skillet and pour eggs into the other side. Scramble eggs until fully cooked, then mix with vegetables.
  4. Stir in soy sauce and cook for an additional 2-3 minutes.
  5. Serve stir-fry garnished with green onions.
