Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 8 ounces fresh mozzarella, sliced
  • 1/4 cup balsamic vinegar
  • Fresh basil leaves for garnish

Directions:

  1. Preheat oven to 375°F (190°C).
  2. Season chicken breasts with salt and pepper. Heat olive oil in a large oven-safe skillet over medium-high heat.
  3. Sear chicken breasts for 3-4 minutes per side until golden brown.
